Traditional Aebleskiver Recipe

Ingredients:

• 2 cups all-purpose flour
• 2 tablespoons sugar
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups buttermilk
• 2 eggs, separated
• 4 tablespoons melted butter
• Butter or oil for pan
• Powdered sugar and jam for serving

Instructions: Whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix buttermilk, egg yolks, and melted butter. Combine wet and dry ingredients. Beat egg whites until stiff peaks form and gently fold into batter. Heat aebleskiver pan over medium heat and add 1/2 teaspoon butter to each well. Fill each well 2/3 full with batter. When bubbles form and bottoms are golden (about 2-3 minutes), use a skewer to turn each ball 90 degrees. Continue turning until spherical and cooked through. Dust with powdered sugar and serve with jam. Makes about 21 aebleskiver.
