Round Tip Koa Cleaver 170mm

The first chef’s knife of 2023 by bladesmith Joshua White to grace our collection is no ordinary kitchen tool. With it’s tall, beautifully forged and finished round tip cleaver profile, this is a one-of-a-kind heirloom object to add to the knife roll and use and admire for generations to come. Crafted at Joshua’s New Jersey studio from W2 carbon steel, the 170mm long by 66mm tall blade enjoys superb compound ‘S-grind’ bevel geometry, convex and tough through the lower section as the polished and etched steel approaches a strong, balanced, and sharp edge designed with versatility in mind. Whether moving through large, dense vegetables or raw proteins, the steel is up to nearly any challenge shy of splitting bone. Joshua’s honyaki approach results in a stunning hamon line and the markings of a careful differential quench during heat treatment of this high carbon tool steel. For the handle, comfortable with every detail accounted for, gorgeous Hawaiian Koa is sculpted into a tapering and faceted wa-style octagonal profile with an oval carving to create an integral end cap in the rear, and a carved G10 ferrule in front.
