Taking the traditional approach of forging, with heat and handheld hammer only, the final geometry of a chef knife to the extent possible, bladesmith Leszek Sikon delivers the first of his S-forged gyutos, with hammered compound bevel geometry, and the results are outstanding. At 233mm / 9.1″ long with a 58mm tall heel and voluptuous profile offering a full-size, versatile blade with high tip for all manner of daily meal prep, this knife is balanced and performance-driven in form and construction. The forged, concave portion of the tall, symmetrical bevels provide food release and smooth movement through any ingredient, supported by a tough, convex, yet thin edge or ‘Spicy White’ 26c3 carbon steel. The bright layer of pure nickel contrasting the darkly etched carbon alloys provides a barrier to carbon diffusion during the forging and heat-treatment processes to ensure the proper hardness and refined grain structure at the cutting edge. A full-distal taper along the comfortable, rounded blade spine thins steadily from the brute-de-forge integral bolster to the fine, pointed tip perfect for detail work and precision slices. Finally, in simple, elegant form, dark claro walnut wood completes the octagonal, wa-style handle with which to maneuver this beautiful tool.
